Making Gulkand (Rose Syrup Paste) at Home

Gulkand (Rose syrup paste) is traditionally made from rose petals and is a delicacy used occasionally in our community. Interestingly, while this syrup is often imported, roses are also cultivated locally in the Maldives. This means we can make rose syrup ourselves using simple, natural methods.

How to Prepare Rose Syrup Paste

  1. Select Fresh Rose Petals Begin with clean, pesticide-free rose petals—preferably from fragrant varieties.
  2. Layer with Sugar Place the rose petals in a clean glass jar and sprinkle a small amount of sugar over them. Lightly press the mixture with your fingers to help the sugar absorb the rose essence.
  3. Sun-Curing Process Leave the jar in the sun during the day. Each day, add another layer of sugar and gently mix with your hand. Continue this process daily for several days.
  4. Natural Preservation The frequent exposure to sunlight helps to preserve the mixture naturally. As the petals wilt, the sugar absorbs their flavor, color, and aroma, creating a rich, fragrant syrup base.

Usage

Once ready, a small amount of this rose syrup can be added to sweet dishes, desserts, or drinks to enhance flavor and aroma naturally.
